Sweet and Sour Chicken

We went over for dinner at the ILs and made fried rice and sweet and sour chicken.

Sweet and Sour Chicken
Adapted from All-Recipes.com.


1 (20 oz) can pineapple chunks, juice reserved
1/4 cup soy sauce
1/2 cup vinegar
3/4 cup brown sugar
1/4 cup all-purpose flour or corn starch
1 1/2 green bell peppers, diced
1 cup chopped celery
1 (8 oz) can water chestnuts, drained and sliced
1 1/2 pounds cooked chicken meat, cut into strips


  1. In a large saucepan over medium-low heat blend reserved pineapple juice, soy sauce, vinegar, and brown sugar. Mix in flour (or corn starch) and stir until thickened.
  2. Stir bell peppers, celery, and water chestnuts into the saucepan.
  3. Mix in chicken. Cook and stir until heated through.
  4. Stir in the pineapple chunks before serving.
  5. Serve and enjoy!

This was nice and simple and good.
